The training is internationally recognised, aligned with UNECE bovine language, and combines scientific rigour with practical, on-site chiller experience to ensure assessors deliver accurate and consistent assessments across facilities.
Courses are delivered internationally, and on-site training at host facilities can be organised subject to feasibility and minimum participation requirements.

Why Chiller Assessor Training Matters
Before an eating-quality grading system can be implemented, the supply chain must be able to collect reliable, standardised carcass-level data.
Beef chiller assessors provide the reference assessments that underpin quality description, predictive modelling, and grading outcomes. Training ensures assessors are competent to collect accurate and consistent carcass data, including when using accredited carcass assessment devices, so results can be confidently applied in both research and commercial grading systems. This consistent description supports trust and clear communication between buyers and sellers.

The following course content and competency requirements are common to all Beef Chiller Assessment Training courses delivered under the IMR3G Foundation framework.
1. Application of the UNECE Bovine Language
2. Carcass pre-conditions and assessment environmen
3. Chiller assessment techniques and scoring attributes
4. Identification and handling of non-conforming carcasses
5. Operation and management of chiller assessment equipment
6. Provision of objective carcass feedback to industry stakeholders
7. Use of recognised correlation and calibration tools for assessor alignment (OsCapTM)
Training Programmes
Assessment & Competency
All participants complete a structured competency pathway including:
1. Practical correlation runs in the chiller
2. Computer-based assessments
3. Written theory examinations
4. Practical skills evaluations
5. An evidence guide demonstrating assessor competency
Industry-standard OsCap™ correlations must be finalised within eight weeks of completing the theory module.
Certification
Maintaining accreditation requires ongoing correlation and monitoring in accordance with the relevant recognised accreditation pathway.

Pre-requisites
Before the Course
- Warm clothing suitable for work in carcass chillers (approx. 4 °C)
- Closed-in, comfortable footwear suitable for production areas
- Spare clothing suitable for daily practical sessions in the chiller
Training Delivery Model
- Full-time delivery combining theory and chiller-based practical training
- Limited class size to ensure practical learning and close trainer support
- Delivery in English, French or Polish, with bilingual support where applicable
The IMR3G Foundation reserves the right to cancel or reschedule the course in the event of unforeseen circumstances such as insufficient enrolments, trainer unavailability, or restrictions affecting delivery at the host site. In such cases, registered participants will be notified as early as possible and offered either a full refund of course fees or the option to transfer their enrolment to the next available session. Participants who are unable to attend after confirming their registration should notify the Foundation in writing; refunds or transfers will be considered on a case-by-case basis.
